Personally I use large wide gape hooks such as Tubertini 175’s or Fox series 2 carp match.
B911’s in the bigger sizes are OK except they are not strong enough for real bagging sessions. If you are suffering losses then try waiting until the float disappears very sharply and really give a good firm strike. Also the paste consistency is vital, try softening it slightly until the hook pulls through reasonably easily. If your getting hook pulls then simply play them very gently, the harder you pull, the harder the will fight.
When I hook a fish on paste in open water, i immediately point the pole tip to the water, then carefully ship back to the top kit and just hold the top kit pointing to the water between my legs. The fish stop fighting and the elastic pulls back easily, when i see the float i give the top kit a quick pull skywards and mug the fish before they wake up. Only problem is they then go bonkers in the landing net ha ha 😀
